Chicken & Vegetable Pie

This is the recipe that started it all - the famous and guaranteed Kids Favourite Dinner original recipe.

Ingredients

  • 1 Large Leek 
  • 6 Bacon Rashers
  • 2 Cloves Garlic 
  • 700g Chicken Thigh 
  • 1 Packet Cream Cheese 
  • ½ Cup Frozen Peas
  • 1 Carrot 
  • 1 Tin Corn 
  • Thyme 
  • 1 Bay leaf
  • ½ Cup chicken stock 
  • Salt & Pepper to taste 
  • 2 sheets of Puff pastry 
  • 1 Egg (Egg wash) 
  • 1 Tablespoon poppy seeds

Method

  1. In a large pot Sauté leeks, garlic till soft then add bacon, vegetables and chicken. Once the chicken is brown add stock, thyme, bay leaf, salt and pepper – Then add the Cream cheese. 
  2. Let simmer for 1 hour
  3. Let cool, then transfer to pie dish , add puff pastry to top, cutting two slits to let the steam out, brush with 1 egg and sprinkle with poppy seeds 
  4. Bake in 180c Oven for 45min or until golden brown
  5. Enjoy !
