Chicken & Vegetable Pie

This is the recipe that started it all - the famous and guaranteed Kids Favourite Dinner original recipe.
Ingredients
- 1 Large Leek
- 6 Bacon Rashers
- 2 Cloves Garlic
- 700g Chicken Thigh
- 1 Packet Cream Cheese
- ½ Cup Frozen Peas
- 1 Carrot
- 1 Tin Corn
- Thyme
- 1 Bay leaf
- ½ Cup chicken stock
- Salt & Pepper to taste
- 2 sheets of Puff pastry
- 1 Egg (Egg wash)
- 1 Tablespoon poppy seeds
Method
- In a large pot Sauté leeks, garlic till soft then add bacon, vegetables and chicken. Once the chicken is brown add stock, thyme, bay leaf, salt and pepper – Then add the Cream cheese.
- Let simmer for 1 hour
- Let cool, then transfer to pie dish , add puff pastry to top, cutting two slits to let the steam out, brush with 1 egg and sprinkle with poppy seeds
- Bake in 180c Oven for 45min or until golden brown
